Have you ever actually listened to all the words to “pina colada song” or “Escape” by Rupert Holmes?

 I was tired of my lady
We’d been together too long
Like a worn-out recording
Of a favorite song
So while she lay there sleeping
I read the paper in bed
And in the personal columns
There was this letter I read

“If you like Pina Coladas
And getting caught in the rain
If you’re not into yoga
If you have half a brain
If you’d like making love at midnight
In the dunes on the Cape
Then I’m the love that you’ve looked for
Write to me and escape.”

I didn’t think about my lady
I know that sounds kind of mean
But me and my old lady
Have fallen into the same old dull routine
So I wrote to the paper
Took out a personal ad
And though I’m nobody’s poet
I thought it wasn’t half bad

“Yes I like Pina Coladas
And getting caught in the rain
I’m not much into health food
I am into champagne
I’ve got to meet you by tomorrow noon
And cut through all this red-tape
At a bar called O’Malley’s
Where we’ll plan our escape.”

So I waited with high hopes
And she walked in the place
I knew her smile in an instant
I knew the curve of her face
It was my own lovely lady
And she said, “Oh it’s you.”
Then we laughed for a moment
And I said, “I never knew.”

That you like Pina Coladas
Getting caught in the rain
And the feel of the ocean
And the taste of champagne
If you’d like making love at midnight
In the dunes of the Cape
You’re the lady I’ve looked for
Come with me and escape

I love how he sees his woman walk into the bar after they are both looking to cheat and her responses is “Oh It’s you” and they laugh.  I would be like “WHAT THE HELL ARE YOU DOING HERE?”   but that is another discussion for another day…..

 Anyway, I made a lovely SKINNY Pina Colada from a recipe that I saw online.

3 ingredients

  • Bacardi Rock Coconut Rum
  • coconut WATER (not Milk or cream)
  • Pineapple Juice

Mix Bacardi with 1/2 cup of coconut Water and then fill the rest with pineapple over ice and shake.  YUMMERS!  It taste just like a Pina Colada but check out the Nutrition Facts.  AMAZING!

I came up with a fun treadmill run tonight 6,5,4,3,2…….1!  I ran for 6min then walked to cool down and then ran for 5 and then went down a minute each time but upped the speed walking in between.

Fab Fourth Flashback July 21, 2011

I have been such a busy bee latley I have not had the chance to blog about my amazing vacation or my trip to “The Basin Harbor Club” but those post will be coming……eventually.  Today I will post about my  festive  Fourth of July.

On the 3rd of July I stopped off at Wawaloam Camp Ground in Exeter R.I.  for a little family fun and birthday wishes to my Aunt Erin and Uncle  Mike for their big 40!  I didn’t get any pics of the cake or the cards (I told you I am a bad blogger)  But then the golf cart parade came through camp throwing candy to the crowds and I remembered to grab the camera.  

Due to the rain it was a little smaller this year than in the past but still fun for kids.

My Uncles  built a little shelter from the storm and the rain passed quickly.

With the sun out it was time for me to go but it is always hard to say goodbye to this guy.

I headed to Newport RI and  The Newport Bay Club  with a few very dear friends for some fun and festivities.

We kicked off the day with this………Oh boy!  If you know whose feet these are you probably had a really good 4th of July.

Then we headed to a pool party for a few of these…..

The BBQ was decorated with a TON of flags and looked truely patriotic.

We headed back to the hotel and ended the night with some perfect fireworks over Newport Harbor.  Again I forgot to take any photos but I got this one online.

Margarita Lime Grilled Shrimp July 20, 2011

I made some Margarita Lime Grilled Shrimp Last weekend while camping and I thought I would share the recipe with everyone.  They were good but could have used some kind of additional dipping sauce for flavor.   I am such a bad blogger lately that I didn’t get any pictures of the marinade or making them.  Here is  a shot of them with some beef and chicken skewers.

Prep Time: 12 minutes

Cook Time: 6 minutes

Total Time: 18 minutes

Yield: Serves 4 to 6


  • 2 pounds shrimp, peeled and deveined
  • 1/4 cup tequila
  • 1/4 cup cilantro, chopped
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 jalapeno, minced
  • 2 tablespoons triple Sec
  • 2 tablespoons lime juice


Combine all ingredients, except shrimp, in a medium mixing bowl. Add shrimp, cover and let marinate in refrigerator for 2-3 hours.Remove shrimp and discard marinade. Thread shrimp onto skewers and grill for 5-6 minutes, turning occasionally. Remove from grill and serve immediately.

Falafel FAIL! July 13, 2011

OK, stepping out of my comfort zone here and trying to make a falafel-  crazy I know.   I bought these falafels so I am not making them from scratch. (1st mistake, but the box promised they were “new and Improved” )

I did however make the sauce.

Piquillo Pepper Yogurt Sauce:

  • 2 cups thick Greek yogurt
  • 3 piquillo or 2 roasted red peppers
  • 1 teaspoon smoked sweet Spanish paprika
  • 4 cloves garlic, coarsely chopped
  • 1 teaspoon grated lemon zest
  • Salt and freshly ground black pepper

Place all ingredients in a blender and blend until smooth; season with salt and pepper to taste and transfer to a small bowl. Refrigerate for at least 30 minutes, covered, to allow the flavors to meld.

Variation: Substitute 2 cups feta cheese for the yogurt, and add 1/2 cup finely chopped parsley.

The Sauce tasted ok.  Not great.

I followed the directions on the side of the packaged and baked the falafel balls in the oven.

I used some pita pockets with lettuce, feta and cucumbers.

When I put the whole thing together it looked awesome……..and then I took a bite!  Gross.

The balls are dry and not crispy on the outside.  They were BAD!  I had to dip each one into the sauce to be able to choke them down.  Ron didn’t even try one.  Oh well ~Win Some, Lose Some!


Floating Art – SEAFAIR July 9, 2011

I was in Newport this last weekend for the 4th of July holiday and got a chance to check out a pretty cool art exhibt for FREE!

The “Megayacht Venue” is a really cool concept.    The boat was awe inspiring alone never mind the $$$ inside this thing.

It was hard to take a picture of the size.  The boat was docked at the end of the Perry Mill Wharf and will be there until Sept 5th, they were allowing free access until 9pm the day we went down.

They had a red carpet down to the entrance where they check you in.

There were three floors of art all by different artist and different styles.  Paintings, photography, blown glass, silver, jewlrey and sculptures.

 The best part of the ship was the top floor!  They had a bar and a few tables over looking Newport Harbor.

You can’t beat that view!

We asked a few NOT so nice people to take a picture of us.  They did it only after giving us a look like we had 10 heads!

“Hey Jerks you know how many tourists we have had to take pictures of the the last 30 years living here?” ~
