I found this simple recipe on “How Sweet It Is” and I love when I see a recipe that I actually have everything on the list already! BONUS – No running to the store! I really enjoy the photos on her site, but they make me extremely jealous that I don’t have enough light in my apartment. 😦 Oh well~ Someday…….sigh.
So I can’t believe how simple this is and it turns asparagus into roasted crunchy fries! Can’t beat that. I added garlic and onion powder to the Panko because that’s how I roll. hahaa.
Panko, flour, salt and pepper, cheese
Asparagus cleaned and trimmed
Dip and Dunk – egg wash then panko mix, it took more than 2 egg whites I used 4
I put them in the oven at the same time as the salmon I had for dinner and a cut a couple of tomatoes in half and put a little EVOO and Mrs.Dash on them. They were tasty too.
Crispy Parmesan Asparagus Sticks
1 bunch of asparagus
2 egg whites
1/4 cup flour
1 cup seasoned panko breadcrumbs
salt and pepper
Preheat oven to 425 degrees. Lay a wire rack on a baking sheet and coat with non-stick spray.
Snap off the tough ends of each asparagus spear. On two separate plates, add the eggs whites (lightly beaten) and the panko + flour + cheese. Season the panko mixture with salt and pepper if desires. Coat each asparagus spear in egg whites, then lay in the panko mixture and thoroughly cover. If the panko won’t stick, dip back in the egg whites and roll in panko once again. Lay each spear on the wire rack.
Bake at 425 for 15 minutes, or until golden brown and crispy.
