CELEBRATE! Tacos and Tequila! (a little lighter)
Ron got some great news at work this week so we decided it was time to celebrate. We made a Fiesta Night starting with frozen “14 Pointers” ~ Margarita’s are 14 WW Points on the old plan and my friend SMD changed their name to “14 pointers”!
We blended up a few of these and threw some ground chicken on the stove. We used to make Tacos with beef but we like them much better with ground chicken. You have less guilt for having a few “14 Pointers”
Lots of fresh toppings! We use Sargentos mexican cheese reduced fat and we substituted Greek Yogurt for sour cream! You can’t tell the difference AT ALL!
I like the whole wheat tortilla’s but Ron finds them a little dry so we went with the taco kit with the tortillas, seasoning and sauce. Make sure you throw the tortillas in the microwave with a moist paper towel over the top for 30 seconds to warm them up. It’s a necessary step.
Ron prefers a nice cold beer of frozen drinks so you can’t enjoy Fiesta Night without a few iced cold Coronas!
YUMMMMM I didn’t even make it to the table before I started digging in.
Next time you make tacos try these easy substitutions and save the calories for the cocktails! Ground Chicken Tacos are muy buena!
