Buffalo Chicken Dip (3 Versions) February 10, 2011

I was torn on Superbowl Sunday on whether I should make the lower fat version or the full fat version of the buffalo chicken dip recipe.  I decided since I didn’t try the lower fat version that game day would not be a good taste test day.  Here is the recipe I made last sunday.

This is such a simple recipe.  Quick and easy with 5 ingredients.

  • 1 pound chicken breast boiled and shredded
  • 1 cup Ranch dressing
  • 1 cup Franks Red Hot
  • 1 bag Sharp Cheddar
  • 1 block of cream cheese

Preheat oven to 350. Boil the chicken and let it cool and then hand shred the chicken and set aside. 

Cube the cream cheese and put it into a 9 X 13 baking dish.

Add the bag of sharp cheddar and put it in the oven to start melting the cheese.

Mix in a cup of franks red hot and a cup of ranch dressing and put it back in the oven.  Keep pulling it out every 5 minutes and stirring till all cubes of cream cheese are melted.

When the cubes are all melted you add in the shredded chicken.

Then cover with tin foil and heat for 20 minutes remove tin foil and heat another 10 minutes until hot and bubbly.  Serve with carrots, celery and chips.

Ok, so now the lower fat versions.  I actually have 2 that I want to try.  One is from Iowa Girl Eats.

Buffalo Chicken Dip


6oz Low-Fat Whipped Cream Cheese

6oz Plain Greek Yogurt

6oz shredded chicken

1/2 cup + 2 Tablespoons Frank’s Buffalo Wing Sauce, divided

3/4 cup Mozzarella cheese, divided

1 1/2 Tablespoons Ranch Dip Mix


In a large bowl, combine cream cheese, Greek yogurt, chicken, 1/2 cup buffalo sauce, 1/2 cup Mozzarella cheese and ranch dip mix. Spread mixture in an 8×8 glass dish and top with remaining Mozzarella cheese and buffalo sauce. Bake for 20 minutes at 350 degrees.

Servings: 9 • Serving Size: 1/2 cup • Old Points: 3 pts • Points+: 3 pts
Calories: 107.9 • Fat: 4.9 g • Carbs: 5.4 g • Fiber: 0 g • Protein: 10.3 g

  • 4 oz reduced fat cream cheese, softened
  • 1 cup fat free sour cream
  • 1/2 cup Franks hot sauce (or whatever hot sauce you like)
  • 1/2 cup crumbled blue cheese
  • 1 tsp white wine vinegar
  • 2 cups (2 breasts) cooked shredded chicken

Mix the first 5 ingredients together until smooth. Add the chicken and put this in the crock pot on low for 3-4 hours. Serve warm. Makes 5 1/2 cups.

They both look pretty good.   I like the fact theat Gina’s is in a crockpot too.  Feel free to try both and vote on which one you think is best!
